Jalapeño Popper Thingies

Last night I drove down to our local Wal-Mart to pick up some jalapeños to make some poppers for dinner. They were 78¢ a pound! Anyhow, while I was making them I felt inspired to blog about it, so here is the recipe…

Please note a few things before beginning…
*These are not for the faint of heart.
*Have water ready to drink.
*Please forgive my photography. Iphones don’t make food look good. They taste amazing though.

First, get yourself about 24 jalapeños and cut them in half lengthwise. Remember your gloves.

Go ahead and scoop out all the white membrane stuff and the seeds. It’s OK if there are a few seeds left on the peppers.

Mix together, with your hands, about 16 ounces of cream cheese, 3 green onions (I guess you could leave these out), and about 1 ½ cups of cheese (I used cheddar).

Then stuff the little peppers with the creamy goodness…

Lay them out on a couple cookie sheets…

Pour some barbecue over the cream-cheese-filled-peppers…

And smear it all over the poppers with your hands (We don’t have a barbecue brush. That’s definitely a cleaner method.)

Pop ’em in the oven at 275° for about 1 hour. The longer you leave them in the less spicy they’ll be.
